From Finance to Commercial, every function plays a crucial role in delivering exceptional passenger solutions. Among these, our Technical Department stands out as a cornerstone of quality, safety, and reliability.

Led by Head of Technical, Stephanie Booker, who has over 10 years of experience in food safety within the airline catering and travel operations industry, our team spans multiple regions across the globe, working tirelessly to ensure that every passenger solution we deliver meets the highest standards. From meticulous safety checks to advanced testing protocols, they make sure our food is safe, consistent and compliant, and their work is essential to maintaining the trust and quality that define En Route.

 

Reliability Across Borders

While primarily based in the UK, at our Windsor headquarters, our technical reach is truly global, and we’re proud to have an international team, with key members located across continents.

  • Senior Food Technologist – Salimeh Rad – is based in Windsor and supports all our UK and European operations.
  • Technical Manager – Pamela Roybal – based in the United States, oversees operations throughout North America, tailoring solutions to meet regional requirements.
  • Senior Food Technologist – Anuj Ohlan – is based in Australia and plays a vital role in managing technical services across the Asia-Pacific region. As a qualified BRCGS Professional and Lead auditor he makes sure every passenger solution we deliver holds up to the brand standard while also complying with global food safety requirements.

 

Our team of dedicated Food technologists; Rumbi, Natalia, Duarte and Ellie also play a crucial role in our industry, specialising in diverse categories and enhancing our value as a business. Their expertise allows for a deep understanding of specific ingredients, processing methods and consumer trends unique to each product type, working hand in hand with NPD. This specialisation not only facilitates innovative product development but also ensures that safety and quality standards are rigorously met. By leveraging their knowledge of the intricacies of various food categories, including Special Meals, our Technical team help us create distinctive offerings that cater to evolving consumer demands, ultimately positioning our business as a leader in delivering high quality, unique solutions.

 

Standards and Safety

Every onboard meal undergoes a meticulous evaluation process. Our Technical team conducts scientific testing to validate temperature controls, simulate onboard reheating conditions, and perform shelf-life studies for full safety validation.

Furthermore, organoleptic surveillance is undertaken globally, where focus is applied to sensory characteristics of our products – such as taste, smell, texture and appearance, ensuring all products are to specification as an essential part of our commitment to quality control.

Beyond food safety, our technical experts also work closely with our packaging and design teams to ensure every label is clear, compliant, and tailored to both international regulations and airline-specific requirements. This attention to detail reinforces the trust our clients place in us and the consistency passengers expect.
